COOKIES AND CREAM PIE

This Cookies and Cream Pie is made with an Oreo cookie crust, crammed with a no-bake filling. Then, we prime the pie with some ganache, whipped cream, and a few extra Oreos.

OREO CRUST

Just to remind you, this could be a no-bake Cookies and Cream pie. I prefer to bake my Oreo crust, althoughas a result of it does assist the crust to crumble much less.
The crust is just crushed Oreos blended with melted butter (you could possibly sub melted coconut oil too in order for you).
Either means, after crushing your Oreos and mixing them with melted butter, press the combination on the underside and sides of a tart or pie pan. I like these with the detachable bottoms like this one.

After urgent your crust down, you may both bake it or simply freeze it for 30 to 40 minutes.
The motive why I prefer to bake it barely for about 10 minutes or so, is as a result of it makes the crust crumble much lessThis step shouldn't be vital. You could make this a 100% no-bake pie, by merely placing the crust within the freezer whilst you put together the components for the filling.

                1. Mix oreo crumbs and melted butter in a bowl. Now, you have two options, you can make this a 100% no-bake pie by sticking the crust in the freezer while you prepare the filling. Or you can pre-heat the oven to 350F and bake the crust for about 4 minutes, just to set it. Baking the crust will ensure that it crumbles less when you cut the pie, but it’s not a necessary step.
                2. Press the mixture on the bottom and sides of a tart pan with removable bottom.

                Cookies and Cream Filling

                1. Melt the white chocolate and set aside to cool slightly.
                2. Beat the 1/2 cup of heavy cream at high speed until stiff peaks form. Set aside.
                3. Beat the cream cheese at medium-high speed for a couple of minutes, until smooth. Add the powdered sugar and beat for a minute.
                4. Add the yogurt and mix to combine.
                5. Add the vanilla extract and the melted and cooled white chocolate to the mixture. Mix until combined.
                6. Add the whipped cream and chopped Oreos to the mixture and fold until combined.
                7. Pour the filling onto the bottom of the prepared crust.
                8. Place it in the fridge until set, for 4-6 hours.

                Ganache

                1. While the pie sets, you can make the ganache. Bring the heavy cream to almost a boil in a small saucepan or microwave it in a microwave-safe bowl for 30 seconds at a time, until hot.
                2. Pour the hot cream over the chocolate. Let it stand for 30 seconds. Stir until the chocolate is melted.
                3. Sometimes you might have to stick your bowl in the microwave and microwave it slightly to help the chocolate melt. That’s why it’s important to have the chocolate chopped very finely so it melts easily and evenly. If you do need to place the bowl in the microwave, make sure to do at 10-second intervals and always stir in between.
                4. Let the ganache come to room temperature for at least 30 minutes.
                5. Pour the ganache over the set filling and place it in the refrigerator for about 30 min.

                Whipped Cream

                1. Whip the 1/2 cup of heavy cream and vanilla until stiff peaks form. Put it in a piping bag fitted with a tip of your choice. Pipe the whipped cream on top of the set ganache to decorate. Top with some more Oreos if you desire.
